Ok,
if you tried to turn it off on the tv and the subs remain on tgheres one more thing you can do before you pass it as a fault, Do a factory re set and set it up again see if it clears it.
if not then i suggest a call to Sony service dept for further instructions.
just to avoid confusion, the above is for the tv.

Hi,
you did not say if it was on recorded material that you are plagued with these subs, so let us assume that is the case, you need to go into settings on your recorder and set the DVB SUBTITLE RECORDING to off.
that should do it.
regards.

Thak you for your response. Afraid its not on the recorded progs, it's while we watch TV and it is so distracting. I've tried pressing the "Subtitle" key and mostly nothing at all happens, but when it does a choice between Off and English is shown, I press the central key to confirm Off and still the subtitles appear. I'm beginning to think after a week of trying to get rid that there's an inherent fault.

Hi there,
Are the subtitles appearing when you are watching TV or when you select the HDMI Source too where you have your HDT-500 connected ?
If it's when your watching just normal TV not through the HDMI source ( to check this, select your input button usually TOP LEFT and see where the highlight bar is will either say TV or HDMI 1 2 3 4 etc ) If on TV then just press the button on your TV remote which has looks like this (....) usually under the number 9 key. That will turn the subtitles on or off on the TV broadcast.
If your getting subtitles when you are watching the recorder, first of all try using the SUBTITLE button just above the green button and selecting off, if that fails enter the system menu, go to Setup and into the Language option.. see if subtitles is set to any language, if so change to OFF.
Failing that try what 55hx23 has suggested, otherwise could be a faulty unit. Hope this helps
