As mentioned in the title the HT-CT390 soundbar drops connection and the TV reverts to using it's own speakers.
I have checked the cable between the two and this appears to be secure.
Does anyone have any ideas why this might be please?

Welcome to the Sony Community! I recommend you start by disconnecting all connected devices from both the TV and SB except for the HDMI cable connecting the two. Then disconnect and reconnect both devices to the mains and verify if the problem persists or not. If not, then also verify that you have not done any cable management (cable binding) on the HDMI cable connecting the two. If you still are having issues, I strongly recommend you purchase a certified HDMI cable. You can recognise certified cables by the orange certification label. These are cables that have been tested to the requirements set to withstand electromagnetic interference, and therefor have generally much better shielding.

I am still getting the problem so I have ordered a new HDMI cable as suggested.
