Hello
I bought a Xperia XZ Premium, and when I try to configure the finger print sensor, I can not found any menu to do it in configurations. I am from Mexico and I bought it in USA. Can somebody help me to know if there is a finger sensor in this phone?

I don't think so, Xperia Companion downloads the version and region of the firmware that your phone has already installed. you need to use Flashtool in order to flash firmware from another region.

Fingerprint option is disabled on Sony mobiles sold in the USA for some legal or patent-related reasons.

That's means there is not way to activate it? Is the hardware not installed? Is there any firmware that can activate it?

I believe that flashing a different firmware (European one for example) can get it activated. If you are familiar with Flashtool then give it a try, though I'm not sure if this will affect your warranty or not, depends on your warranty contract terms.
