The STAMINA icon on the notification bar is turned off automatically when the phone's charging.

So I don't thing you have to switch it off manually

it doesn't matter if you have the STAMINA on or off when you charge your phone, the same goes for airplane mode, or playing games or using your phone while charging it, just like anything else, if you use your phone while charging it will take longer, if you charge your phone through a computer it will take a LOT longer than using a wall charger.
